In the Shaffa valley on the road to Hebron, families from Beit Jala have tended their vines for generations. Cremisan Winery's winemaker Fadi Batarseh works directly with these families to source the indigenous Dabouki grape — a variety that might otherwise disappear. Every bottle is an act of preservation, and a direct investment in the local community of Beit Jala.
