Doér Galilee Highlands 2021 — Ashkar Winery

Named after a circular ruin in the village of Iqrit — the Ashkar family's ancestral home — Doér takes its name from the Arabic word Doera, meaning circle. It also echoes the name of the Doeri, a native Palestinian bird celebrated for its beautiful voice. In a single word, this wine carries history, place, and poetry.

A blend of Cabernet Sauvignon, Merlot, and Shiraz, hand-picked from the finest vineyards around Iqrit in the Upper Galilee, Doér is Ashkar Winery's most ambitious expression. Each parcel is vinified and aged separately for around two years in predominantly French oak barrels, then blended and aged for a further year after assemblage — a total of three years of patient, meticulous craft.

The result is a wine of rare completeness: complex, elegant, and built to age gracefully for many years to come.
